What is boondi ladoo?

Ingredients for Boondi batter
- 2 cups of besan (gram flour)
- ¼ tablespoon baking powder
- 2 cups of water or add water to the batter depending on your quantity
- Crushed Saffron (optional for flavour)
- ½ tablespoon of cardamom powder
- Oil or ghee to deep fry
- Melon seeds
- Pinch of camphor (optional)
Ingredients for sugar syrup
- 2 cups of sugar or take half a cup more If you like more sweet
- ¾ cup of water

- Deep fried boondi
- Sugar syrup
- Chopped and fried dry fruits in ghee
How to make soft boondi ladoo at home
Follow these steps to make soft boondi ladoo at home. Follow them correctly and read them twice if you don’t understand how to make perfect soft boondi laddoo.
Making sugar syrup:
Step 1: Keep a pan on the stove and put water and sugar in the pan.
Step 2: to get a better taste, cook the sugar and water mixture until it becomes one-third of the quantity.
sugar syrup must be hot when you add boondi to it so you pour some hot water in a big bowl and keep this pan in the bowl by covering it with a lid so that it remains hot until boondi deep fried.
Step3: preparing boondi batter
To make a boondi batter add the dry ingredients of gram flour,baking powder, and cardamom into the bowl. Slowly by adding some water whisk the batter continuously till you get a smooth and thick batter . If the boondi is thin, it will become flat. If it is thick, the boondi will become more tasty and crunchy.keep the batter aside for some time.
Step 4: frying boondi
Pour oil or ghee into a deep frying pan and heat the oil at medium flame.once the oil is heated, take the perforated spoon, hold it in one hand and batter in another hand .slowly pour the batter into the perforated spoon .batter will fall into the oil forming into tiny drops .fry boondi until it gets golden brown colour in a medium flame to get crunchy and crisp boondi.
After each batch of making boondi clean the spoon for the next round to make the same quality boondi.
Step 5: Soaking boondi in sugar syrup
After frying boondi in oil, drain the excess oil with the tissue paper. Then transfer it into the sugar syrup. Keep it aside for 20-25 minutes under room temperature so that the boondi will absorb the sweetness from syrup and become soft.
Step 6: add some ghee to a frying pan.Fry dry fruits until it gets into brown colour to remove the raw smell. And transfer this into the boondi and syrup mixture.
Step7:Shaping into ladoos
After soaking in syrup, rub some ghee on your hands and take a handful of boondi mixture and, by rotating your hands, shape it into small balls.
Repeat the same process until all the boondi is shaped into ladoos
Step 8:Garnishing and serving
Keep all boondi ladoos on a plate and garnish them with saffron stands and chopped dry fruits.
Tips to get soft ladoos
1. Use ladoo instead of ghee to give more shelf life and avoid the smell.
2. Don’t use a combination of oil and ghee for frying boondi.
3.Batter should not have to be thick to get a crisp texture.
4. Don’t add boondi in a cool sugar syrup which will reduce the softness of the ladoo.
5.Take out the boondi from oil when the bubbles in oil are gone.
