Ingredients 

  • 1Pound of chicken breast, cut into bite-sized pieces
  • 1 pound of mushrooms, sliced
  • 1 medium-sized onion, chopped
  • 3 garlic cloves, minced
  • 1/2 cup of Madeira wine
  • 1/2 cup of chicken broth
  • 1/2 cup of heavy cream
  • 1 tbsp of olive oil
  • Salt and pepper to taste
  • 1 pound t of pasta
  • Fresh parsley, chopped

Preparation 

It is important to prepare all the ingredients before starting cooking. Cut the chicken in to bite size pieces, slice mushrooms, chop onions and garlic. Once all the ingredients are chopped, then cook pats on medium flame according to the instructions given n the package.

Take a small size bowl, mix madeira wine and chicken broth to create a rich and creamy sauce for pasta recipe. Chop some fresh parsley and keep it aside. This will add color and freshness to the recipe in the final presentation.

Cooking instructions for Pasta With Chicken And Mushrooms In Madeira Wine Sauce

Cooking chicken 

Take a large pan and heat it on medium heat with one tablespoon of olive oil.

Once the oil is heated up, then add chicken pieces into the pan and season with salt and pepper.

Cook on medium heat for 5–7 minutes until it becomes golden brownish color and crispy on top. 

Remove chicken from pan and keep it aside.

Sautéing mushrooms 

In the same pan, add 1 pound of sliced mushroom pieces and cook for 5 minutes or until it reduces its moisture and start becoming brown color.

After mushrooms releases its moisture then add chopped onion, and garlic in the pan and cook for 3–4 minutes. 

Now add Madeira wine and chicken broth in a separate pan and stir to combine. Bring the mixture to a simmer and cook it until it comes to half.

Add cooked chicken and sautéed mushrooms into the saucepan.

Add cooked pasta to the pan and toss until it’s well combined.

Garnish with chopped parsley and serve with lemon slides.

How to make Madeira wine sauce

Ingredients  

  • 1/2 cup of Madeira wine
  • 1/2 cup of chicken broth
  • 2 tablespoons of butter
  • heavy cream 
  • Salt and pepper to taste

Instructions 

  1. Pour half cup madeira wine and half cup chicken broth in a pan, cook them on medium heat.
  2. Scrape the bottom of the pan to release any browned bits in the bottom.
  3. Bring the mixture to simmer and cook it about 4–5 minutes, or until it is reduced to half.
  4. Add heavy cream to the sauce mixture and stir them to combine.
  5. Again, simmer the sauce for 2–3 minutes, so it gets slightly thickened.
  6. Season sauce with pepper and salt to taste.
